I just used Wugfresh's NRT, I'm unlocked and rooted, made a nandroid.  Is my next step to make an EFS backup, not sure of the necessity.

EFS is something that doesn't come with any image package.  It is device specific and contains your imei info.  There have been instances where the imei is lost and it can be most difficult to recover.

Good call.  Just make sure it is completely separate from your other Nandroid backup.  There have been a few instances of folks getting a replacement device, inadvertently copying over all backup files including EFS, and restoring EFS from the old device to the new.  Very bad.

Good mention LDubs. That would cause two devices on the same network to be active with the same imei. It would be immediately viewed as fraud and kicked into the fraud dept. Causes a load of problems.

I'm making another Nandroid as I've adjusted a bunch of settings I want to keep and just noticed TWRP includes the EFS as part of their back-up options.  Either way, I do have the separate zip if I ever need, but maybe it's now a redundant file?

yeah, latest TWRP includes option for EFS backup.  I used the zip file you linked a few posts up but from what I understand they do the same thing.

I made a backup of my EFS after unlocking and rooting this phone and forgot to make a backup of my stock ROM before flashing Cataclysm ROM. What should I do to get a stock ROM backup saved on my phone in case something happens? Kind of new to this phone.
Using TWRP. Thanks for any help and sorry if this is the wrong place to ask this question.

I made a backup of my EFS after unlocking and rooting this phone and forgot to make a backup of my stock ROM before flashing Cataclysm ROM. What should I do to get a stock ROM backup saved on my phone in case something happens? Kind of new to this phone.

With an Unlocked device, it really isn't a big deal as long as factory images are available - which they obviously are for your device.  The only thing it helps with is you avoid all the setup time involved.  The EFS backup is outside of that however, so keep that handy.

So should I look for a stock ROM and keep it handy on my phone or is the EFS backup I made the same as a stock ROM backup? I'd like to have a plan B in case I mess up with flashing a custom ROM. I have a copy of the EFS on my phone and on my computer. Like I said I'm kind of new to this phone (coming from a rooted Droid RAZR). Thanks for your help.

Factory images for Nexus devices can be found HERE.

 

It's up to you, but if you want to be more prepared than just having a bookmark, you could download the image so you have it available on your computer.  Just saves you the download time when you are in need. :)
